Delicate annual herb, constituent of the French herb mixture „fines herbes“ along with tarragon, chives, and parsley. The taste is determined by the essential oil of the plant: Fresh herb contains around 0.03%, fruits 0.9%. Main constituents of the volatile oil are 1-allyl-2,4-dimethoxybenzene (30%) and estragole (methyl chavicol, 60%).

„The composition of the essential oil from the different above ground plant parts of Anthriscus cerefolium and A. caucalis collected in the urban area of Vienna has been studied. The essential oils of A. cerefolium were dominated by estragole (= methylchavicol) and 1-allyl-2,4-dimethoxybenzene, occurring in various proportions. The oils from young flowering plants had more estragole than 1-allyl-2,4-dimethoxybenzene. Fruits from one location reached 95% estragole in the essential oil.“

„The water-distilled essential oil of Anthriscus cerefolium (Umbelliferae) growing wild in Turkey was analyzed by GC/MS. Four compounds comprising the total oil were methyl chavicol (83.10%), 1-allyl-2,4-dimethoxybenzene (15.15%), undecane (1.75%) and β-pinene (<0.01%).“
